4 large boneless skinless chicken breasts butterfly cut
2 cups cooked rice
1 cup diced broccoli
enough bacon to completely wrap around the chicken
Cook the rice according to instructions on the package. Melt cheese and mix with the rice along with the broccoli. Take this mixture and use it to stuff the chicken with. Wrap the stuffed chicken with bacon strips. Bake in the oven at 350 degrees F for apx 1.5 to 2 hours.
Serve with salad and mixed steamed veggies.
